Potato Salad with a twist

2 ½ pound red bliss potatoes ½ “ cut
½ Vidalia onion, chopped
½ cup roasted peppers chopped
½ cup pepperoncini peppers, sliced thin into rings
½ cup pitted Kalamata olives sliced in half
½ cup Feta cheese crumbled
¾ cup extra virgin olive oil
2 tablespoon lemon juice
1 tablespoon lemon zest
4 tablespoon Simply Greek- Greek Salad Spice®
Place potatoes in medium saucepan and add enough water to cover by 1 inch.
Bring to a boil over high heat and cook until tender.
Drain, cool in ice water.
In a large bowl add potatoes, onions, olives, pepperoncini, roasted peppers, and feta cheese.
In a small bowl, whisk oil, lemon zest, lemon juice and Greek Salad spice®.
Drizzle on potatoes then toss gently.
Refrigerate for 3 hours.
Delicious with Chicken Souvlakia.
