Greek Lamb Chops

Tender, juicy lamb chops bursting with bold Greek flavor—made simple with Simply Greek Foods Lamb Rub

Ingredients

  • 8 lamb chops (loin or rib, about 1-inch thick)

  • 2 tbsp Simply Greek Foods Lamb Rub or to your liking

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • Juice of 1 lemon

  • 1 tsp sea salt (optional, taste before adding since the rub is seasoned)

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the marinade:
    In a small bowl, combine olive oil, lemon juice, garlic, and Simply Greek Foods Lamb Rub. Mix into a paste.

  2. Season the lamb:
    Pat lamb chops dry with a paper towel. Rub the marinade mixture evenly on both sides of the chops. Place in a shallow dish, cover, and let marinate for at least 30 minutes at room temperature, or up to 4 hours in the fridge.

  3. Cook the chops:

    • Grill method (traditional): Preheat grill to medium-high. Cook lamb chops for 3–4 minutes per side for medium-rare, or adjust to your preferred doneness.

    • Pan-seared method: Heat a cast iron skillet over medium-high heat. Add a drizzle of olive oil, then sear chops 3–4 minutes per side until golden brown and cooked to your liking.

  4. Rest:
    Remove from heat, cover loosely with foil, and let rest for 5 minutes to lock in juices.

  5. Serve:
    Garnish with fresh parsley and a squeeze of lemon. Pair with roasted potatoes, Greek salad, or warm pita bread.
