Greek Pita Bread

Perfect for dipping in Tzatziki, hummus, or wrapping gyros

Ingredients

  • 1 cup hot water (about 110°F / 43°C)

  • 1 packet active dry yeast (2 ¼ tsp)

  • 1 tsp sugar

  • 1 tsp salt

  • 1 tsp olive oil

  • 2–2 ½ cups all-purpose flour

Instructions

  1. Activate the yeast:
    In a large mixing bowl, combine hot water, yeast, and sugar. Stir gently and let sit for about 10 minutes, until the mixture becomes foamy and bubbly.

  2. Mix the dough:
    Add salt, olive oil, and 2 cups of flour. Stir until a shaggy dough forms. If the dough is too sticky, add up to an additional ½ cup of flour, a little at a time.

  3. Knead:
    Transfer dough to a lightly floured surface and knead for 5 minutes, until smooth and elastic.

  4. First rise:
    Place the dough in a lightly oiled bowl, cover with a damp towel or plastic wrap, and let rise in a warm place for 1 hour, or until doubled in size.

  5. Punch down & second rise:
    Gently punch down the dough and let rise again for 30 minutes.

  6. Shape:
    Divide dough into tennis ball–sized pieces. Roll each piece into a flat disk about ¼ inch thick.

  7. Cook:
    Heat a dry skillet or pan over medium-high heat. Cook each pita for about 2–3 minutes per side, until puffed and lightly golden.

Serving Suggestions

  • Serve warm with Tzatziki, Hummus, or baba ganoush

  • Use as a wrap for gyros or souvlaki
