Simply Greek Meatballs with Lemon Sauce
2lbs ground lamb
2 small onions chopped fine
ó cup rice
2 tbsp butter or oil
ó cup flour
Salt and pepper to taste
5 cups of water or chicken broth
2 tbsp Simply Greek® Lamb Rub
juice of 1 lemon
Bring the water (or Broth) to a boil in a medium sized pot with a little salt.
Combine and knead the meat, onion, salt, pepper, parsley, rice and Simply Greek® Lamb Rub thoroughly.
Shape into round balls and sprinkle with a little four.
Once the water/broth is boiling, add meat balls and butter, and simmer for about 40 minutes or until the rice is tender.
Separate the egg whites and yolks into two separate bowls. Beat the whites until
they form peaks. In the other bowl, add the lemon juice to the yolks and beat thoroughly.
Fold in yolk and lemon sauce into the egg whites.
Once the meatballs are done, remove pot from the hot stove. Take a couple of
tablespoons of the pot liquid and stir into egg mixture to temper the eggs.
Pour the egg sauce into the pot of meatballs and stir in gently. Take care not to allow the sauce to boil or the eggs will curdle.
